Scrambled tofu

For 4 people
3 tablespoons extra virgin olive oil
1 onion
500 ml of tomato puree
2 sticks of tofu
salt and pepper to taste.

water or vegetable broth (optional)
Finely chop the onion and fry in oil.
When is soft (not burnt!) add the tomato sauce, add salt and pepper and let it pull the sauce for a while (about 5 minutes).
Meanwhile, crumble the tofu with a fork and add it to the past, let it cook for 5-7 minutes, making sure that the sauce does not withdraw too (can be remedied by adding a few tablespoons of hot water or vegetable broth is always warm) and stir.
When cooked, add the basil and serve.
This is a very simple and quick to prepare and as an alternative to Basil you can add the oregano. It can also be recycled very well as a sauce for pasta or for the filling of nocturnal sandwiches!
