For 4 people
quinoa (one cup coffee pod person)
2 red onions
juice of one lemon
fresh mint
fresh parsley
1 peeled cucumber and cheese
cherry tomatoes or sliced fragolini
fresh chilli or ground


Cook the quinoa in lightly salted boiling water (warning: swells and absorbs a lot of water) for 15 minutes, then drain and set aside.
