Potatoes with green sauce

For 4 people:
1/2 kg of potatoes
20 pitted green olives
6 pickled gherkins
2 teaspoons mustard
6 tablespoons extra virgin olive oil
3 tablespoons white vinegar


Peel the potatoes, slice them and place them in the steamer basket.
Prepare the sauce: finely chop the olives and gherkins, place them in a bowl and add the remaining ingredients (mustard, oil, vinegar, salt, oregano, chives, and freshly ground pepper).
Mix all ingredients well, beating with a fork.
Transfer the cooked potatoes slightly overlapping the slices on a plate and pour over the green sauce, spreading it evenly.
Let cook for about ten minutes.
Are good warm and cold.
