Tricolor flan

For 4-6 people
2 green peppers
4 large potatoes
3 ripe tomatoes
1 clove of garlic
3 or 4 tablespoons extra virgin olive oil
salt and pepper
Wash the peppers, cut into pieces by eliminating seeds and white parts.
Peel the potatoes and cut them into slices thick enough.
Wash the tomatoes and cut them into pieces, removing the seeds.
Sprinkle with a tablespoon of olive oil on the bottom of a baking dish.
Make a first layer of potatoes, salt lightly, continue with one of the peppers, drizzle with a little oil and a pinch of salt, then another layer of potatoes and finish with the tomatoes.
Sprinkle with the finely chopped garlic, the rest of the oil, season with salt and pepper and bake at 180° C for 40-45 minutes.
Serve warm.
