Mayonnaise with shallots

For 4 people
70 g of dried soy beans
olive oil to taste
1 tablespoon of lemon juice
1 medium/large shallot


Cook soy beans, previously soaked for 8 hours, and processing them in a tall, narrow container with 2/3 tablespoons stick mixer with about of their cooking liquid until you have a uniform cream; Add the oil, lemon juice, shallots and salt.
To run the mixer up and down several times in the container to mix the ingredients and after a few minutes the mayonnaise is ready.
Keep refrigerated.
