For 4 people: 400 gr. tofu-400 gr. a large onion-carrot (or 2 small)-1/2 garlic cloves (optional)-oil-Salt and pepper


Cut into slices carrots and cook them to steam.
Meanwhile chop onion and cook in a pan with a little oil and possibly even a little water.
After about 10 minutes, add the crumbled tofu (in order you can also use a fork), stir and sauté it all, stirring occasionally.
When carrots are cooked al dente, add them to rest in the Pan, adding salt and pepper and add a little oil.
Sauté a few more minutes and at the end of cooking time, add chopped fresh parsley (or use frozen or dried).
Serve and enjoy!
