Spaetzle with smoked tofu

For 4-6 people
500 g of vegan spaetzle without eggs
400 g of smoked tofu
200 ml soy cream
extra virgin olive oil


Prepare the sauce while you cook the spaetzle in boiling salted water.
Cut the tofu into cubes and then crush coarsely with a fork.
Brown it in a large pan with a little oil and, just before you drain the spaetzle, add the soy cream.
Mix thoroughly, add the spaetzle drained, mix well and serve hot.
