Avocado and carrot sauce

Ingredients

For 4 people
1 ripe avocado
1 cup of carrot juice
2 tablespoons chopped parsley
lemon juice
cold pressed olive oil

 

Instructions

Put the ripe avocado in a blender with the remaining ingredients except the lemon juice.
Blend until a smooth cream.
Then add lemon juice, a little at a time, tasting the sauce so stop by when you have obtained the degree of acidity that you like.
The sauce is ready to serve.
Keep in the fridge.
