200 g of cereal flakes, 2 tablespoons extra virgin olive oil, 1/2 lemon, salt, 1 cup of soy yogurt, 2 baby carrots, 1 bunch of radishes, 1 small bunch chicory leaves, for mint leaf or basil, 100 g of pitted black olives, 1 tablespoon wheat germ


Prepared 200 gr. about mixed cereal flakes to your taste (barley, wheat, corn, oats, rice, soy), put them in a bowl with a tablespoon or two of olive oil, lemon juice, salt to taste and a jar of soy yogurt.
Let soften for a couple of hours.
Meanwhile clean and grated two carrots, finely sliced 1 bunch radishes and a bunch of leaves of chicory.
Chop some fresh mint or basil leaf, then add to the vegetables with a handful (about 100 g) black olives, pitted.
Mix well, arrange on lettuce leaves and add gently the cereal flakes, sprinkle with a tablespoon of wheat germ flakes fresh.
