For 4 people: 4 tablespoons olive oil-1 sliced onion-2 cloves garlic, crushed- 2 sliced tomatoes-250 grams of rice-a pinch of saffron-yellow and 1 red pepper chopped 1-125 g peas-125 grams of beans into pieces-1/2 l 125 grams of broccoli-of vegetable broth -salt-a bit of parsley-lemon


In a large frying pan, sauté the onion and garlic. Add all the other vegetables already cut and cook for a few minutes. Add the rice, salt to taste and saffron. Mix well and pour the broth. Simmer gently not too high for about 18-20 minutes, until the rice is cooked. Before serving, let cool a bit and add a handful of chopped parsley and a splash of lemon.

Io metto anche i fagioli Bianchi di Spagna. Ottima ricetta. In alternativa uso il riso di Venere quello nero ( da non confondere con quello al nero di seppia). Slurp
