For 4 persons: 200 g of chestnut flour-2 tablespoons of vegetable oil-1 lemon-70 g sugar-50 gr of pine-kernels-soy milk-1 packet of yeast-salt


Mix in a bowl the flour, a pinch of salt, sugar, grated lemon rind.
Form a crater in the center and pour in the oil and soy milk, stir well and add soy milk just enough to get a soft dough. Add now the sifted baking powder and pine nuts, stir to distribute evenly the yeast.
Grease and flour a round baking pan and pour in the mixture which must have a depth of a few centimeters.
Bake in a preheated oven at 170 º for 50 minutes.
When the cake is golden brown on the surface and dry inside (check with a toothpick) will be ready.
You can serve it so or decorate it with icing sugar.
