For 4 people: 400 gr of zucchini, parsley, thyme, tarragon and basil, vegetable broth, 1/2 lemon juice, extra virgin olive oil


Wash and peel the zucchini, then boil the broth for about a quarter of an hour. Wash and dry the herbs, then build up in some chopped and set aside.
Drain the zucchini and remove the ends, then cut into rounds and place on a serving plate. Now toss the zucchini with a little olive oil, lemon juice and the chopped herbs.
Serve the dish hot.
