Sweet potato and pineapple cake

500 g sweet potatoes
450 gr of fresh pineapple
3 tablespoons brown sugar
50 g peanuts
3 cloves
1 teaspoon lemon juice
1 tablespoon extra virgin olive oil (for baking)
Boil the sweet potatoes for 30 nm CA, Peel and mash.
Cut the pineapple into chunks, keeping some for garnish.
In a bowl mix the mashed sweet potatoes with chunks of pineapple, sugar, cloves and lemon juice.
Pour the mixture into a greased pan with extra virgin olive oil and garnish with pineapple.
Bake in the oven for 30 mn to 200° c.
Toast the peanuts, chop them up and put them on the plate before serving.
