Peppers with tofu

Ingredients

For 4 people:
4 bell peppers of various colors (yellow, red, green)
2 sticks of soft tofu
1 onion or 2 shallots
herbs (marjoram, thyme ...)
oil
salt

Instructions

Thinly slice the onion or shallots and place in a skillet with a tablespoon of oil.
When the onion is translucent, add the diced peppers, salt, cover with a lid and cook for about 15 minutes.
While cooks make sure the peppers have pulled out their water: If there is not enough to cover them, add a glass of hot water.
When the peppers are soft and "creamy", add the diced tofu and herbs to taste, Cook well and serve hot, accompanied by bruschetta with extra virgin olive oil.
