Artichoke quiche

For 4 people:
For the dough
300 g flour
4 tablespoons olive oil e.v.
1 pinch of salt
For the filling:
8 artichokes
2 tablespoons breadcrumbs (let him from you, with your bread, otherwise maybe you risk that is not vegan)
1 sprig of parsley
the juice of 1/2 lemon
1 clove of garlic
5 tablespoons olive oil e.v.
salt to taste.


Prepare the filling.
Clean the artichokes by removing the stems and tough outer leaves; exists and cut into slices, put them in a bowl with water and lemon juice, lest it turn black.
Peel the garlic, wash and clean the parsley and chop together.
Put the mixture in a pan with 4 tablespoons oil, leaving Brown and add the artichokes.
Add salt and cook over low heat with a lid on for about 40 minutes, pour a little water from time to time if necessary, and then sprinkle with bread crumbs.
Prepare the pastry: mix the flour, salt and oil in warm water in sufficient quantities to obtain a smooth dough but elastic, working for 10/15 minutes.
Spread in a thin layer, and arrange the artichokes cooked by now; roll the dough over itself by sealing the edges, place it in a baking tray greased with oil.
Go to a preheated oven at 180° C for 30 minutes, remove from oven and then cut into slices.
Serve hot or warm.
