Medlar ice cream

For 4 servings
250 g medlar
300 g sugar
1/2 liter of water
1/4 liter of soy whipped cream
Prepare a syrup by putting sugar in a pan with water and letting it simmer for 10 minutes.
Meanwhile, sieve the pulp and add it to the mixture of warm sugar medlar.
Add 3 tablespoons lemon juice and finally the whipped cream, stirring gently so as not to dismantle it.
Transfer the mixture into a container and put it in the freezer.
When you will be solidified, whisk it for 1 minute and store it back in the freezer until ready to serve.
E' perfetto per una merenda o come dessert fuori pasto.
