Soy stew with potatoes

soy stew
soy sauce (shoyu)
extra virgin olive oil
vegetable broth
white wine


Peel the potatoes and cut into chunks.
Chop the onion and fry in a tablespoon of oil with a clove of garlic.
Add salt and add the potatoes, stir briefly, then add a ladle of vegetable broth and a sprig of rosemary.
Cover the pan with the lid and simmer 10 minutes.

Alla vostra buonissima ricetta ho aggiunto un peperone verde tagliato a pezzetti e qualche cucchiaio di sugo di pomodoro.

Non l'ho provata, ma consiglierei di sostituire lo spezzatino di soia con seitan a cubetti. Lo spezzatino si usava quando non c'erano altri sostituti trent'anni fa, ma risulta sempre gommoso, in qualsiasi modo si proceda: ora per fortuna abbiamo seitan e tofu e la differenza si sente!!
