Orecchiette with artichokes

For 4 people
20 g of flour of durum wheat
200 g wholemeal flour
2 glasses of lukewarm water
1 pinch of salt

3 beautiful artichokes
0.5 liter of vegetable stock
2 cloves of garlic
4 tablespoons extra virgin olive oil
salt and pepper


Knead the flour with a pinch of salt with warm water until the dough is smooth and elastic.
Formed a small cylinder with a diameter of 1 or 2 cm and cut into 1 cm long pieces, then crush it immediately with the rounded tip of a knife or the thumb, forming an orecchietta
Knit a cylinder at a time so that the dough does not dry out.
Once the orecchiette, place them on a dish towel.
In a casserole, Brown the cloves of garlic and add the artichokes sliced very finely after being deprived of the tough outer leaves.
Season with salt and pepper and cook to taste.
