Apple peel sauce

quick 15 minutes recipe
500 g organic apple peel
100/150 ml vegetable stock
1/2 lemon
2 large shallots
2 tbsp oil
1 pinch of cinnamon
1 clove
2 sage leaves
2 juniper berries


Wash the husks and place them in a saucepan with the lemon peel cut into pieces, broth, spices, juniper and sage.
To boil, reduce heat and cook.
Meanwhile, mince the shallots and place in a pan with oil and as much water.
Salt them lightly and fry seasoning over medium heat, stirring.
Turn up the heat and evaporate the liquid.
Stir the chopped at the skins and puree it with the hand blender.
Garnish with the lemon juice and season with salt.
