Spelt tagliatelle with vegan ragout

For 4 people
350 g organic spelt tagliatelle
300 g vegan ham/sausage
1 organic celery
1 large organic carrot
1 large organic onion
1/2 glass red wine without sulfites
sea salt to taste
1/2 cup organic extra virgin olive oil
200 g organic tomato pulp
vegan parmesan


Boil the water and add salt slightly.
Meanwhile, cubed (or chopped in a blender) ham/sausage vegan.
Sauté celery, carrot and onion.
Add the ham/sausage and pour in the wine.
Add the tomato and cook for about 10 minutes until the tomato will partly evaporated.
Add the tagliatelle and sprinkle with parmesan vegan cheese.
Served hot.
