Timbale with turnip greens

Ingredients

For 4 people

100 g of tofu
200 g of potatoes
200 g of couscous
300 g of turnip greens
1 onion
1 clove of garlic
extra virgin olive oil
salt
popper
laurel
nutmeg
slices of toasted wholemeal bread or bread of emergency (to serve)

Instructions

Cut the potatoes, onion, garlic and steam for 10 minutes.

Apart cook turnip greens like asparagus (in a deep pan with little water in which to immerse only the stems) and the remaining water to cook the couscous.

Boil the tofu for 5 minutes with a splash of vinegar, spend all the mixer adding the oil and spices and mix all the mixture evenly.

Have with parchment paper in a loaf pan.

Serve with slices of whole wheat bread toasted with garlic and season with salt and oil.

(cooking 45 mn at 180° C)
