Red rice with 'fair' mushrooms

For 4 people

200 g rice Thay Red
2 packs of dried mushrooms of Ecuador (Fair Trade)
olive oil cold pressed
whole sea salt
some organic vegetable stock powder (optional)
a handful of fresh parsley finely chopped


Rice Thay Red is a very good rice variety and also nutritious.
Cook in boiling salted water for about 20-25 minutes.
Prepare the mushrooms separately (after being soaked for about half an hour in a bowl of water) in a pan with a little oil, garlic and salt.
Keep the rice al dente, strain ripassalo with mushroom sauce.
Add the parsley and serve hot.
