Clouds of spinach

For 4 people
250 g puff pastry
1/2 kg of spinach
1 onion
1 clove of garlic
1 tbsp rice flour
1/2 glass of soy milk
extra virgin olive oil


In a large pan, saute onion and garlic in olive oil.
Add the spinach and season with salt and pepper.
Simmer for a few minutes.
Stir in the flour and mix carefully.
Pour the soy milk and simmer until you've absorbed.
Let cool.
Roll out the puff pastry and cut it so you get half a dozen squares of about 8 cm from the side.
Put the filling in the center of the squares of puff pastry and close them up, at least partially, modelling them at will.
Bake in preheated oven at 180° C for about 30 minutes or until the puff pastry is inflated and golden.
