Tartar sauce on toast

150 g soy mayonnaise (can also be found in organic food stores and/or macrobiotic)-1 bunch of parsley-1 sprig of tarragon-.5 lemon zest-1 gherkin in vinegar-1 tbsp pickled capers
Using a kitchen mixer, chop together the parsley previously rinsed and dried with a paper towel,
the tarragon, lemon zest, capers and Pickled Gherkin.
Immediately afterwards, pour the sauce into a large bowl that
put in the refrigerator for a few hours before serving.
Spread the sauce on crispy bread croutons and serve as an appetizer.
