1 head of lettuce – 1 head radicchio chicory –  2 fennels - 1 celery - 4 kiwis – 2 apples – 2  tangerines – extra virgin olive oil – shoyu - apple cider vinegar


1. Wash the heads of lettuce, dry thoroughly and slice in a large salad bowl.  Peel the kiwis and apples and cut them into thin half moons. Remove external celery rib and slice white internal leaves and the heart.

2. Slice fennel and peel tangerines. Prepare a vinaigrette with olive oil, shoyu and vinegar to taste, pour over the salad and toss well. Leave it in the refrigerator until ready to serve.
