Aromatic potato fritters

2 tablespoons chopped tarragon 2 tablespoons chopped fresh chives-salt-black pepper-3 medium potatoes peeled-8 Tablespoons extra virgin olive oil


Mix in a bowl the chives, tarragon, salt and pepper. Coarsely grate the potatoes and mash to remove water excess. Add the rest and stir. Heat oil (very hot) and unite a spoonful of the mixture giving the shape pancake flat with the back of the spoon once posed in the oil. Fry the pancakes.
