Ingredients

3 or 4 artichokes, oil, salt, 1 or 2 heads red chicory salad, 200 grams of tofu, 100 gr. black olives, toasted bread

Instructions

Clean three or four fairly large raw artichokes, remove the outer leaves, cut off the ends at a height of approximately 2/3 of the artichoke, then cut them into quarters and eliminate even finer tips that stand in the middle and could "feel" more than the eye. Then slice fairly thin and season immediately with salt and oil to prevent them from becoming black. Artichokes contain a good amount of dietary iron, so they tend to blacken easily when cut (such as apples, pears, bananas, etc.). Clean one or two bunches of Red radicchio and cut the leaves into small pieces, put them in a bowl. Cut 200 gr. tofu into cubes and place in a bowl. Pitted 100 gr. black olives and add to tofu. Mix Artichoke and radicchio and serve immediately with toast.
