Mango chutney

4 green mangoes-3 dl white wine-60 g almonds-60 g raisins-30 grams of ginger-cinnamon (5 cm)-2 cloves of garlic-1 tsp chili powder-240 grams of unrefined sugar-salt


1) Peel mangoes, cut them in half and remove the stones.
2) Chop the flesh, place it in a bowl, sprinkle with salt and cover with a liter of water. Let it sit for 24 hours and then drain.
3) boil the sugar in vinegar (in the list of ingredients is quoted the vino and not vinegar) until melted.
4) Add crushed garlic, minced ginger, pepper and cinnamon and boil for 5 minutes.
5) combine the chopped mango and cook for 10 minutes.
6) add the almonds, raisins and cook for another 5 minutes.
7) allow to cool and remove the cinnamon stick before pouring into jars.
8) seal and not open for another two weeks.

Bellissimo sito! Un suggerimento:preparando il chutney di mele, è più frequente usare le noci che le mandorle, ed un gambo tenero di sedano bianco,privato dei filamenti, dà un tocco in più! Inoltre, l'originale ricetta indiana prevede un ciuffo di coriandolo finemente tritato! Buon Chutney a tutti!
