Rice stir-fry with lemon

For 4 people:
320 g of brown rice (already cooked) - 1 large leek - 4 tablespoons extra virgin olive oil - 2 tablespoons soy sauce (shoyu) - 1 organic lemon
Cut the leek (also the green part) lengthwise into very thin slices.
Wash well and toss with the olive oil in a large pan.
Aside from grate the lemon zest.
Add the rice to the leek and stir well.
Add a bit of shoyu and sprinkle with grated lemon peel.
