Baked rice with tofu

For 4 people:

4 tablespoons extra virgin olive oil

1 1/2 tbsp of margarine

1 large onion, finely chopped

1 cup brown rice boiled

330 g  pressed tofu

1 tsp salt

1 pinch of pepper

1 cup of soy milk

50 g of breadcrumbs

50 g of nutritional yeast flakes


Heat oven to 180 degrees.

Heat a skillet or a wok with 2 tablespoons oil and margarine, add the onion and fry well.

Add the brown rice and then the tofu, and cook for 2 minutes, seasoning with salt and pepper.

Pour the mixture into a baking dish or on a greased pan with the remaining oil.

Pour the milk, then sprinkle with the breadcrumbs and the nutritional yeast.

Bake for 15-20 minutes.
