Crispy fried tofu

For 2 servings: 330 gr. about of tofu, pressed 3 to 5 tablespoons of well-kudzu powder or cornstarch, or flour-immersion frying oil-shoyu


Cut the tofu into 6 rectangular pieces and wipe the dust of kudzu. Heat oil in the wok, the Pan or deep Fryer to about 200 degrees. Simply slip the tofu and FRY until browned color acquires immersion. Let drain. Ask each guest to dress his tofu with shoyu and accompaniments (grated ginger, finely sliced leeks, daikon radish, wasabi or). It's delicious served with slices of lemon and a pinch of salt.
The secret to getting a crispy crust and light is the use of kudzu powder (arrowroot), although other Breading work well.
