Tomato cream with tofu

For 4 people: 1 tablespoon oil 1 onion 1 diced tomato-diced-1-cup of soy milk-1 tsp salt-a pinch of pepper and/or 1/2 Tabasco sauce-garlic clove, crushed, or 1/4 teaspoon oregano, marjoram or garlic powder-350 gr. tofu-2 tablespoons chopped parsley


Heat oil in a pan, add the onions and fry over medium heat for 3 minutes, or until they become translucent.
Add the tomato and cook for 2 or 3 minutes, stirring constantly, then add the other five successive ingredients and cook for one minute, stirring constantly.
Turn off the heat and let cool for a minute, then add the tofu, and passed to the Blender until a smooth cream.
Serve hot, preferably cold fridge, garnished with parsley.
Great for the summer.
