For 6 people: 500 g of brown rice-vegetable broth-2 medium onions-1 1/2 courgette-Leek stalk-2 cauliflower-1 carrot-salt-pepper


Cook rice in broth away from fire ten minutes before the end of cooking.
Meanwhile in a large saucepan, saute in olive oil chopped onion and Leek. Add the cauliflower cut into pieces by a centimeter. Let it cook for a few minutes, adding a little water.
Then add the zucchini, cut into pieces the same size as the shredded cabbage and carrot. Season with salt and pepper.
After a few minutes, pour the rice with the cooking liquid and simmer for another ten minutes, so that all the water can evaporate.
