Risotto with nettles

For 4 people:
400 grams of rice 2 cups finely chopped shallots-2-semi-integral of nettle tops chopped-4 Tablespoons extra virgin olive oil- vegetable broth -salt-gomasio


Sauté the chopped shallots in oil then add the rice and brown slightly. Add salt to taste.
Add the vegetable stock , a little at a time, and cook for about 15-18 minutes. Add the nettles after about five minutes since you joined the rice and stir.
Served with a bit of gomashio.

Nella preparazione potete sostituire il riso con un altro cereale, ad esempio orzo o farro, variando di conseguenza anche i tempi di cottura.
