Basmati rice with peppers and mushrooms

For 2 people:
200 g Basmati rice
1 yellow pepper
1 red bell pepper
200 g of mushrooms
1 onion
salt and pepper
extra virgin olive oil


Put the rice to cook in boiling water (usually you cook in 10/12 min). You can also do not salt water, but it's a personal taste.
In a large skillet, sauté the finely chopped onion regain.
Add the red and yellow bell pepper cut into small pieces rather small.
When the peppers are tender, add mushrooms cut into slices or wedges.
When the rice is ready, drain it well and throw it in the pan with the other ingredients.
Stir for a few minutes while avoiding the rice from sticking.
Add salt and pepte to your liking and add a little oil if the rice seems too dry.
