Spicy seitan stew

For 4 people:
400 g of seitan (more tasty if to the plate but that's OK too)
5 tablespoons extra virgin olive oil
2 large onions
2 large potatoes
2 Bay leaves
vegetable stock cube
enough water to cover
chilli or pepper
Slice the onions and fry with the bay leaf.
Add the potatoes to be cut very fine because good hand you have to melt, forming a delicious puree as it bakes.
Fry the potatoes and onion, being careful that it does not stick, and add hot water almost immediately, the nut and salt if the nut is not enough.
Towards the end of cooking add the seitan, cut into strips or cubes.
At the end of cooking, add pepper or chilli.
Your stew is ready!
If desired, a variation might be to add these ingredients of mushrooms halfway through cooking. If by chance you are not provided with cooked legumes, seitan but you have just add these and you're done.
