Rice pudding with pears

For 4 people: 120 gr. of brown rice flour-2 cups of soy milk- 2 tablespoons brown sugar-the rind of a lemon-PEAR 4-sale


Add flour to milk, taking care not to create lumps, add a pinch of salt, sugar and bring to a boil, stirring. Cook over low heat for 20 minutes, 5 minutes before turning off the heat, add the lemon zest. Peel and cut into squares pears, add three quarters to the pudding and pour into a mould ring wet with cold water. Let stand in refrigerator for one hour. Just before serving, turn the pudding on a serving dish and fill the void at the Center with the remaining pears.

Per rendere più sofisticato il budino, un pizzico di cannella alla miscela rede il tutto molto più saporito.
