Ravioli with sage

Ingredients for the filling:
about 70 g of tofu to natural (or flavored herbs and chilli pepper, oil-free)
1 handful of spinach and squeezed (conserve water spinach to mix the flour)
4 chopped walnuts
a drop of oil flavored with crushed red pepper
some capers (optional)

Ingredients for the dough:
wheat flour "00"


Crush with a fork on tofu and soy sauce, add the walnuts and chopped spinach, some capers and mix everything in order to get a homogeneous mixture.

Prepare the dough, cut it into strips about 8 cm and then into squares and fill them with a little of the mixture; fold each square and pass the edges with a fork.

When the ravioli are cooked, toss with olive oil and Sage.
