Ingredients

For 4 people
1 leek
2 fennel bulbs
3 oranges
1 bunch rocket
2 cachi vanilla

For the vinaigrette:
80 ml extra virgin olive oil
100 ml orange juice
1 orange peel
2 tablespoons of Apple Cider vinegar
2 sprigs of finocchetto
1 bunch of chives
dried chilli
Salt

Instructions

Sliced scallions, including the green part, and fennel.
Put them in a bowl and then add the chopped Arugula and chopped vanilla persimmon into thin wedges.
Cut the oranges by retrieving the juice in a bowl and add the orange slices with vegetables.
Finely white part 1 orange peels and cut into julienne.
In a bowl, prepare the vinaigrette: mix the olive oil, orange juice, cider vinegar, pepper and a pinch of salt.
Add the finocchetietto, chopped chives and orange peel julienne.
Dress the salad with the vinaigrette, stir and serve with the remaining vinaigrette.
