Frushi - fruit sushi (1)

50 ml water
200 grams of rice for sushi
50 grams of sugar
50 ml coconut milk
1 pinch of salt
10 slices of orange
20 fresh raspberries
1 vanilla soy yogurt (170 ml)


Bring to boil the water and pour in the rice.
Cook about 15 minutes making absorb water almost completely.
Remove from heat and let stand for another 15 minutes.
Transfer the rice in a bowl, add sugar, coconut milk and salt and mix very well.
Cover tightly and let stand 20 minutes.
Formed into small balls with rice (20 in all), mash them afterwards, until they become ovals. Then put them on a plate lined with parchment paper.
At the center of each applied a slice of orange or two raspberries squeezing slightly to make them fit tightly.
Cover tightly the pot until it is time to serve.
Serve with the yogurt to dip in it.
