Tofu and mixed vegetable quiche

For 3 people
1 roll of vegan puff pastry, frozen
1 package of frozen mixed vegetables
5 cubes of frozen spinach
1 green zucchini
200 g of tofu
extra virgin olive oil


Heat FRY mixed vegetables with about 4 tablespoons oil. Meanwhile boil the spinach.
Roll out the puff pastry, thawed at least 2 and a half hours previously, on a circular dish and roll the edges.
Cut the zucchini and tofu into cubes.
Once cooked spinach, cut roughly into small pieces and merge them into the Pan along with tofu and mixed vegetables.
Put it all on the pastry rolled out and over form a layer with Zucchini.
Brush with oil, salt, pepper and Rosemary and bake for 30 minutes at 200 degrees.
