Green dumplings with nettle sauce

Ingredients

For 4 people

For the dumplings

700 g potatoes
ca. 250 g flour
150 nettle steamed tips
salt

Nettle sauce
1 handful of nettle tips
some herbs as desired (e.g. sage, marjoram ...)
250 ml milk vegetable unflavoured
Salt
1 tablespoon flour
1 tablespoon of extra virgin olive oil
nutritional yeast flakes

Instructions

Prepare the dumplings in the traditional way, boiling the potatoes and mix all the ingredients.
Forme the dumplings and cook them in boiling salted water until they float to the surface.

For the sauce, cook in steam the tips of nettle, blend together with herbs and vegetable milk, pour the mixture into a pan, add the oil and flour and bring to a simmer, stirring carefully.
Add the nutritional yeast flakes, stir again and cook on low heat for a minute, turn off the heat and let rest another minute.
Toss the dumplings with this sauce, which is also suitable for pasta and cereals in grain.
