Vegan gazpacho with sun-dried tomatoes

300 g ripe tomatoes

30 g of dried tomatoes

2 medium cucumbers

1 stalk of celery

extra virgin olive oil

Gazpacho is a typical dish of the region of Andalusia which is prepared as a starter, but which can also be served with ice and glass as an aperitif.
The peculiarity of this soup is that goes cold consumed, accompanied with the croutons. In addition, the strength of this dish lies in the simplicity of the ingredients, such as tomatoes, peppers, cucumbers, celery and herbs of various kinds.
The ingredients for this recipe are very common, cheap and easy to come by. There will be difficult, therefore, to find them. But come on, now, to see what to do to prepare our gazpacho.
The ingredients are calculated for two people, but you can, of course, increase or decrease as you please.


Take a bowl and fill it with water. Inside place the sun-dried tomatoes and put them to soak for about 2 or 3 hours.

Thoroughly wash the tomatoes, cucumber and celery and cut into small pieces.

Drain the sun-dried tomatoes and cut them into small pieces, too, by adding them to the other vegetables.

Put all these ingredients vegans in a blender (preserved only one quarter of cucumber that will serve for decoration) and start blending at low speed, to avoid creating foam.

Once you have a uniform mixture pour the contents of blender into a bowl or in a bowl and add the extra virgin olive oil, sesame seeds, salt, pepper and herbs to taste.

Finally, decorated by adding the cucumber you saved, diced.

And here you have made in a few minutes the perfect gazpacho to serve with croutons or, if desired, with corn or rice cakes.

You can also add some ice to cool down the temperature or use it as an vegan aperitif by placing it in a glass with ice, maybe decorating it all with a stick of celery and a piece of cucumber.
