Ingredients

For 4 people: 120 g chickpea flour-about twenty flowers-a small bunch of chives-extra virgin olive oil-Salt

Instructions

You can prepare this porridge with vegetables: this is a tasty substitute for the classic (and vegan!) omelet!

Cut into strips the courgette flowers and chopped chives.
Prepare a batter with flour and a little water until the mixture is not too thick.
Add a little salt.
Combined with the batter the courgette flowers and chives and cook the batter, using a nonstick pan, in hot oil for 2 or 3 minutes per side, until the porridge will not have taken a golden appearance.
