Tofu curry with Greek bread

Ingredients

For 3 or 4 servings: 2 tablespoons olive oil 2 cups sliced mushrooms-2-cups of sliced onions-1/2 cup carrots, finely slice cabbage 2 cups (Moon)-sliced or chopped very finely-400 gr. about pressed tofu (Chinese), crushed (2 cups)-5 or 6 tablespoons margarine-2 tbsp wholemeal flour-1 cup water-1 teaspoon curry powder-1 tsp salt-6 sandwiches "pitta" whole wheat flour, with a diameter of 15 cm. about, cut in half

Instructions

Heat the oil in a large skillet.
Add the mushrooms and saute for 2 minutes, then add the onions and carrots, and saute 2 minutes more. Add the cabbage and cook for 2 more minutes, then turn off the heat.
Dissolve 2 tablespoons of margarine in a pan, add the flour and Brown for 30 seconds until it is lightly browned.
Add the curry powder and salt, then pour the water, stirring constantly. Cook stirring for 1 minute, then add the tofu and cook 1 minute. Pour the curry sauce on the vegetables in a large bowl and mix well.
Heat a tablespoon of margarine in large frying pan, add 3 means 1 or 2 rolls and FRY for minutes on each side until golden, then remove from the Pan and open them with a knife or a spatula.
Repeat with all the pieces of "pitta", let cool 5 minutes. Cover with the mixture of tofu and vegetables, and serve hot or cold.
For a change, you can use fried tofu.

Conosciuto anche come "pitta", il pane greco è una specie di pane rotondo e cavo che si può tagliare a metà e farcire facilmente con una grande varietà di cibi. E' un'idea nuova e deliziosa per preparare dei panini.
