Caramelised potatoes

For 4 people:
800 g sweet potatoes
90 g margarine
1/2 cup brown sugar
1 tablespoon of lemon juice
1/2 cup orange juice
1 cinnamon stick
2 teaspoons grated lemon rind


Peel the potatoes and cut into fairly thick slices, then place them on a looming and sprinkle with melted margarine.
Add the sugar, lemon juice and orange juice, and cinnamon stick.
Cover with a lid or with silver paper and bake at 180 degrees for 30 minutes.
Stir gently, remove the cinnamon and sprinkle with the grated lemon rind: bake uncovered for another 15-30 minutes, until they are crispy on the surface.
