Ingredients

For 4 people: 350 g Pearl barley-2 carrots-1 courgette-1 handful of green beans-1 box of white beans of Spain-Basil-lemon juice-olive oil-Salt

Instructions

Rinse the orzo and boil for about 30-40 minutes in boiling salted water.
Meanwhile clean the green beans and cut them into pieces of approximately 3-4 cm. Then diced carrots and zucchini and cook with steam green beans (the carrot will be inserted first and cooked longer).
When cooked, drain barley and pass it under water to cool it down, riscolatelo well and place in a salad bowl.
Add the steamed vegetables, the drained beans and a few leaves of Basil.
Season with an emulsion of extra virgin olive oil, salt and a little lemon juice.
