Ingredients

500 gr. fresh and tender spinach, 1 small bunch of watercress leaves, 2 carrots, 1 small handful of walnuts and chopped, 1 tablespoon of raisins, 1 tablespoon lemon juice
Dressing: 3 tablespoons olive oil and salt or soy yogurt

Instructions

Take spinach, clean them and wash them thoroughly changing the water three times and setting aside the toughest leaves that are best suited to being cooked in other preparations or centrifuged as an addition to a vegetable juice. Wash and clean a bunch of fresh watercress leaves, cut into small pieces and add to spinach. Grated two carrots, add a small handful of walnuts and chop and a tablespoon of raisins let them soak for a few minutes in a tablespoon of lemon juice. Mix well, add salt and season to taste with olive oil or with three tablespoons of soy yogurt. This particular combination of ingredients guarantees a correct assimilation of a vast amount of minerals and natural vitamins. Special for the anemic!
