Tofu with cereals and fried vegetables

For 4 people: 2 tbsp oil-1 garlic clove, crushed 1 cup finely sliced onions 2--mushrooms into small pieces, or Lotus root, celery or Aubergine-1 small carrot, grated or sliced-2 cups of buckwheat noodles, or rice, already boiled-700 gr. about tofu, crumbled, or 330 gr. pressed tofu and cut into cubes-1 spoon about 4 or 5 tablespoons shoyu-ketchup-2 tablespoons of salt with Sesame or 1/2 teaspoon salt--1/2 cup crumbled nori (optional)


Heat the oil in a frying pan or wok, and add one after another: garlic, onions, mushrooms, carrot, and noodles or vermicelli (or rice), about 1 or 2 minutes each ingredient to browning. Add next four ingredients and cook, stirring constantly, for about 3 minutes more. For best results, leave to cool for 4 or 6 hours. Serve sprinkled with nori.
