Delighting fonio casserole

180 g of fonio
1.2 litres vegetable stock
2 large carrots, diced
1 large onion, chopped
450 g of cooked chickpeas or canned
1 can of chopped tomatoes
sliced garlic to flavor
1 tablespoon cumin
1 teaspoon cayenne pepper
2 teaspoons turmeric
1 teaspoon cinnamon (optional)
30 g of fresh parsley, to be added shortly before serving


The fonio is a cereal of African origin.

Mix all the ingredients in a casserole dish, cover and bake at 180° C (gas oven level 4) for 35 minutes.
Mix, add water if the mixture is too dry and cook again in the oven until carrots have softened (other 30 minutes).
Remove from the oven and let it sit for a few minutes, then add the parsley.
This dish is delicious served with milk or soy yogurt, accompanied by a fresh cilantro sauce (chopped and then mixed with a little salt and lemon juice).
